How to Cook a Pork Roast with Potatoes and Carrots

Pork roast with potatoes and carrots is an easy to make meal that the whole family will enjoy. Pork roasts are great for special occasions and holidays too. A pork loin can be bought in all different sizes so you can cook one for a small family or you can cook one large enough to feed everyone in town for the holidays. The best thing about cooking pork roast with potatoes is that it only takes a few minutes to prepare and then it just has to sit in the oven and roast. To cook a pork roast with potatoes and carrots, gather the following ingredients:
3 -4 lbs boneless pork loin
6 medium potatoes
6 large carrots
Garlic powder
Onion powder
Olive oil
Thyme
Salt
Pepper
Before you start the roast, preheat the oven to 325 degrees. Then, in a small bowl, mix 2 tsp. garlic powder, 2 tsp. onion powder, 2 tsp. thyme, and a dash of salt and pepper. Pour 1/3 of the mixture into a separate bowl for later use. Use the remaining 2/3 to rub down the pork roast. After rubbing down the pork with the mix, place it a shallow roasting pan with just enough water to cover the bottom of the roast. Let the roast cook for one hour.
Slice the carrots and cut the potatoes into quarters. Then cook the potatoes and carrots in boiling water for about 10 minutes. Then drain them and let them cool. After cooling, mix the potatoes and carrots in a large bowl with the remaining mix used to run the pork roast and 2 tsp. olive oil. Place the vegetables around the pork roast and continue cooking for another 45 minutes.
Before slicing, cover the roast with aluminum foil and let the roast stand for 15 minutes. This recipe will make about 10 servings.

Your pork roast certainly sounds easy enough to make and I never met a pork roast that I didn't like.
